Miso Cod #SundaySupper

Putting food together is an art like everything else in life. However, when made with fresh ingredients it is truly a masterpiece.  As the creator of one of my favorite blogs, Steamy Kitchen, Jaden Hair knows how to turn Asian food into a beautiful masterpiece.  Not only are her recipes beautiful, but they are also fresh and healthy.  Jaden’s new cookbook, Steamy Kitchen’s Healthy Asian Favorites, is no different.  The recipes and the photography are breathtaking.

Jaden shows us how to prepare Asian recipes that many of us love to order in restaurants but could never imagine making at home.  Since the first time I opened this cookbook, I could not wait to get cooking.  It was so hard to decide which recipe to start with, but my love for Cod kept bringing me back to page 151… Miso Cod.  It is a simple recipe with lots of flexibility- this is exactly how I love my recipes, since I have a hard time following strict instructions.

Miso CodIt is so true that we eat with our eyes, and the photography in Steamy Kitchens Healthy Asian Favorites will have you drooling from the minute you pick it up.  With the exception of one photo, Jaden shot every single recipe in the cookbook.  It is truly a work of art.  Let me just apologize now… my photos don’t do this cookbook any justice.

Miso Cod | Steamy Kitchen

Miso  Cod | Steamy Kitchen

Ingredients

  • 2 tablespoons shiro miso (white miso)
  • 2 tablespoons sake
  • 2 tablespoons mirin (or 1 tablespoon honey mixed with 1 tablespoon water)
  • 1 tablespoon honey or sugar
  • 4 pieces black cod (about 6 ounces each)

Instructions

  1. Combine the miso, sake, mirin, and sugar in a reselable bag. Mix well.
  2. Add the fish fillets to the bag, seal the bag, removing as much air as possible.
  3. Massage the bag a bit, spreading the marinade all over the fillet.
  4. Refrigerate for 2 hours or up to 2 days.
  5. Heat the oven to 400 degrees.
  6. Line a baking sheet with parchment paper.
  7. Remove the fish from the marinade and use a paper towel to gently wipe off any excess marinade, but don't rinse the fish.
  8. Discard marinade.
  9. Place the fish in the prepared baking sheet and bake until the fish flakes easily, about 10 to 12 minutes.
  10. Move the fish to the top rack and place 6 inches from heating element.
  11. Turn oven to broil to brown and caramelize the fish, about 1 minute. Keep a close eye on it as it will burn easily.
  12. Serve immediately.

I have had the pleasure of breaking bread with Jaden at her home when she gathered friends together for a fun Pig Roast.  I was amazed and admittedly a little bit jealous by her beautiful surroundings.  Since leaving Portugal as a little girl, I have longed to have fresh eggs in the morning from the chicken coop and to pick my own vegetables.   The idea of living on a five acre homestead and living off the land is a current dream of mine but a reality for Jaden and her family.

Jaden was a pro at cutting this delicious pig... and boy was it delicious

Doesn’t Jaden look like a pro cutting into the perfectedly roasted pork?  Let me tell you, I was impressed!  You can not imagine how juicy the pork meat was.

These lucky chickens have the most beautiful chicken coop I have ever seen.  It was built by Scott, Jaden’s husband, and it is truly a 5 star resort.

    I’m drooling over that BBQ, there is nothing like fresh smoked BBQ… yum! I don’t know if I have ever had cod, but this recipe is so easy that I know I will have to try it soon.

    I know what you mean! Every time I see Jaden’s homestead on posts and stuff, I am so jealous! Not only does she have so much land. . but the chickens!!! I love it! and what are you talking about?! I love your photos and that you served your miso cod on a bed of yummy noodles! YUM!

    I have to admit that I am not a big fan of cod but this looks very delicious and adding the noodles to the dish makes it that much more delicious looking for me! I love Asian noodles, in fact of my favorite Asian meals is soba noodles that are served cold with wasabi and scallions on the side. Can’t wait for #SundaySupper chat on twitter! @frogger097

    One of my favorite Asian dishes is a homestyle dish called tomato and eggs. This is a very easy and healthy stirfry to make and one of the first a child is taught to make in China. They eat it as lunch but I like it for breakfast! My twitter handle is MyKitchenandI. I blog about Asian foods all year long, so I would love to win this cookbook. 😉

    Your fish and photos look fabulous, Isabel. Don’t sell yourself short! I love cooking with cod. After reading your glowing recommendation of Jaden’s cookbook, I’m putting it on my must-buy list. It’s so cool you got to hang out with her! One of these days, I’m going to write a post and hopefully it’ll be about how awesome it was to hang out with you at your home, eating your amazing meals 🙂

    What I wouldn’t give to go outside every morning for fresh eggs! Guess I’ll have to do with my local farmers grabbing them for me. 🙂 Love that you paired this with noodles, bet the combo tasted great.
