As a busy working mom of four, one of my biggest struggles is getting dinner on the table during the week. This is especially true during the fall when I have to get my boys out the door for football practice. I learned a long time ago, when we had 3 football schedules plus a cheerleading schedule, that easy meals are the key to eating dinner together as a family.
Our Weekday Supper Meals are usually created from a spin-off of our Sunday Supper creation that week. Our evenings run much smoother when I plan ahead and create a meal plan on Sunday evening for our week. I like doing this because it keeps me organized and also because I can think about all the ingredients that I need and use them in each recipe, therefore I don’t have as much waste. This also saves money on our grocery bill.
