I love this time of year! There is nothing like having a houseful of kids, laughter and great food. My older two came home from college yesterday and I can not tell you how happy this mama became as everyone sat in the family room catching up, picking on each other and giggling. Old friends popped in and we relived memories from high school days. I loved watching my younger two as they chimed in and felt like they were fitting in with the “big guys.” It was one of those nights that make a mom so happy.
Thanksgiving is all about the memories, the conversations and of course the turkey. As much as I enjoy the traditional Thanksgiving meal, I love reinventing leftovers into something that is completely different than the original form. One of our family’s favorite dishes to make with the leftover Thanksgiving turkey is Creamy Turkey Orzo Risotto. It is one of the simplest dishes but somehow it seems like you are enjoying a delicate risotto that required painful stirring. The addition of eggs and fresh lemon takes this dish to a whole new level.
Thanksgiving leftovers don’t need to be boring — try this dish and let me know what you think. By the way, feel free to use chicken – my kids love this recipe so much that we quite often make this for a quick and easy Weekday Supper using a rotisserie chicken.
Ingredients
- 6 cups of chicken stock
- 1 pound box of orzo
- 2 cups cooked turkey or chicken, shredded
- 6 tablespoons butter
- 1 cup grated parmesan cheese
- 2 eggs
- 1 lemon
- sea salt and pepper to taste
- parsley, chopped for garnish
- shaved parmesan cheese
Instructions
- Bring the chicken stock to a boil in a large saucepan.
- Lower heat to medium low and add the orzo pasta. Stir until the pasta is loose in the water.
- Simmer uncovered until orzo is tender, and al dente, stirring frequently for approximately 18 to 20 minutes. There will still be some liquid in the pan.
- Remove 1/2 cup of liquid from the pan and temper the eggs - add the eggs and stir them with the warm liquid.
- Add the shredded turkey or chicken and stir until well blended.
- Add butter and parmesan cheese to the orzo and stir quickly.
- Add the tempered eggs and continue to stir.
- Add juice from 1/2 lemon and continue to stir.
- Season with salt and pepper to taste.
- Slice remaining lemon into thin slices and use as garnish in individual bowls.
- Garnish with parsley and lemon slices and serve immediately.
- Sprinkle with shaved parmesan cheese if desired
