
You’re going to want to grab a cup of coffee and join me in indulging in these delicious Coffee Toffee Crunch Cookies. I promise, you will not be sorry you did.
My recipes usually focus on my family but every once in awhile, I like to treat myself to something special. Something just for me. I love my afternoon cup of coffee and these coffee toffee crunch cookies are a perfect pick me up for special days. When I look back, I started my afternoon coffee tradition when the kids were little and I would be picking up the older two from school every afternoon.
The two younger ones usually took their naps on the way to school and it was a bit of peace and quiet in the middle of my busy day. For the first time in 18 years, I am not in the carpool line. It has been a bit of an adjustment. If you had told me that I would miss those moments in the carline, I would never have believed it. Yet, it is true. I miss the days of driving to pick up the kids, sipping my coffee and listening to the excitement of their day when they got in the car.
I have recently started enjoying my afternoon indulgence by taking an afternoon work break. Some days, I treat myself to a coffee toffee crunch cookie or two. The best part of these cookies is that they freeze really well. I have been know to hide them in the depths of my freezer (shhhh… don’t tell my kids) and enjoy one every afternoon with my cup of coffee. Many days, I find myself reminiscing those busy afternoons with a Suburban filled with kids excited to share their day at school. I remind myself to enjoy every moment with my kiddos because time really does fly.


- 1 Stick Butter, Softened
- ½ Cup Packed Brown Sugar
- ½ Cup Granulated Sugar
- 1 Teaspoon Instant Coffee
- 1 egg
- ¼ Teaspoon Almond Extract
- 1 ½ Cup AP Flour
- ½ Teaspoon Baking Soda
- ⅛ Teaspoon Cream of Tartar
- ¼ Teaspoon Cinnamon
- ⅛ Teaspoon Salt
- ½ Cup Slivered Almonds
- ½ Cup Chocolate Toffee Candy, Chopped
- Cream together butter, sugars, and coffee
- Scrape down sides
- Add egg and almond extract, mix well
- Add ingredients, mix until just comes together
- Fold in almonds and candy
- Chill dough 30 minutes
- Shape into small balls
- Bake 350F for about 12-15 minutes or until golden brown
