
I love soup! Especially any type of Chicken Soup… after all, it is good for the Soul. I have to tell you, not too long ago, my family my hurt feelings. They told me they loved Chick-fil-A Chicken Noodle Soup. They never actually said more than my homemade soup, but I got the hint. As someone who prides themselves on the fact that fresh food made at home is always best, this was hard to swallow. To be honest, they really hurt my feelings! Seriously, how could a fast food restaurant have better soup than the kind I made homemade?
While I do find Chick-fil-A to be one of the best fast food restaurants, I just couldn’t accept this. I became obsessed I was on a mission to make my soup better equally as good as Chick-fil-A Chicken Noodle Soup.
After many experiments in the kitchen, I found the key to making an amazing Chicken Noodle Soup. The secret ingredient is using the leftover Chicken Carcass from a Garlic, Lemon Rosemary Roasted Chicken. This revelation actually made me very happy. I love that I am now using the entire Chicken, without any waste, to make a delicious stock for my Almost Chick-fil-A Chicken Noodle Soup.
Ingredients
- 3 tablespoons Olive Oil
- 1 Onion, chopped fine
- 4 Celery Stalks, diced
- 4 Carrots, diced
- 3 Garlic Cloves, minced
- 12 Cups of Water
- 1 Chicken Carcass, Garlic Lemon Rosemary Roasted Chicken or your choice
- 2 Chicken Bouillon Cubes
- 2 Bay Leaves
- 4 tablespoons fresh Parsley, minced
- 2 1/2 Cups Egg Noodles
- Salt and Pepper to taste
Instructions
- Heat Olive Oil in large Pot.
- Add Onion, Celery, Carrrots and Garlic and saute until soft.
- Add Water and Chicken Carcass and bring to a boil.
- Once boiling, reduce heat to low and simmer for 2 hours.
- Remove Carcass, making sure there are no bones left in the broth.
- When Chicken is cool enough to touch, pick bones clean, discarding bones, skin and cartilage.
- Add Chicken back into the broth.
- Add Chicken Bouillon, Bay Leaves and Parsley and bring to a boil again.
- Once boiling, bring back down to a simmer and add Egg Noodles
- Simmer for 1/2 hour.
- Season with Salt and Pepper if needed
Guess who made a Chicken Noodle Soup that the entire family is now craving? The flavor of this broth is so intense. Using the chicken carcass and the layers of flavor from the veggies takes this soup to another level! My family thinks this Chicken Noodle Soup is the Bomb! Full diclosure: I have no idea how Chick-fil-A Chicken Noodle Soup is made. This is totally my version.

Your recipe sounds good with the flavored chicken chicken carcass being used for the stock. It’s an extra added touch that I am sure is what made it so good and why your family enjoyed it so much.
