Orecchietta Pasta with Brie, Broccoli and Tomatoes #SundaySupper

What do you think of when you think of budget food? I know that many times I think of, unhealthy, canned or processed foods come to mind. The Sunday Supper Family is proving that budget friendly doesn’t have to be that way. This week, we are sharing our favorite budget friendly recipes and many of them are absolutely healthy, delicious and just fantastic. Would you ever think that Orecchiette Pasta with Brie Broccoli and Tomatoes Recipe would fit the bill? Yes it does!

I was recently at the grocery store and saw brie cheese on sale – BOGO! Buy one get one free brie? That is when I thought hmmm… this is perfect for a budget friendly recipe. So, that is where the idea began for this recipe. My inspiration did not fail me, brie adds a great punch to a pasta dish and just a touch give it a smooth and creamy texture – throw in some broccoli and tomatoes and this is a fantastic budget friendly dinner that the family will love. Oh and did I mention that the broccoli was on sale for only 99¢ per pound. Double score!

Orecchiette Pasta with Brie Broccoli and Tomatoes Recipe #SundaySupper

Ingredients

  • 1 pound orecchiette pasta
  • 1 pound broccoli, cut into spears (I like to include the stems too)
  • 2 tablespoons olive oil
  • 8 ounces brie cheese
  • sea salt and pepper to taste
  • 1/2 pint grape tomatoes, cut into 2 or 3 pieces
  • 2 green onions, chopped fine
  • shaved parmesan cheese
  • parsley for garnish (optional)

Instructions

  1. Cook the orecchiette pasta according to package directions.
  2. If you like your pasta al dente (I highly recommend it) cook for 2 minutes less than the directions on the package.
  3. Add the broccoli when there is 5 minutes left to cook.
  4. While the broccoli and pasta are cooking, remove the brie rind and cut the brie into cubes.
  5. Place the brie on the bottom of a large bowl.
  6. Drain the pasta and broccoli and reserve 1 cup of the pasta water.
  7. Add the hot pasta and broccoli on top of the brie and add olive oil.
  8. Season with sea salt and pepper and stir until well blended and the broccoli is broken into small pieces and mixed well with the pasta.
  9. Add the grape tomatoes and green onions and mix well.
  10. Sprinkle some shaved parmesan cheese and parsley on top and serve immediately.

    Double score is right! It’s funny because when I first read, brie, my thought was ‘budget friendly?’ Then I realized that, of course, you figured out how to take a creamy delicious ingredient that may not always be budget friendly and turn into the perfect budget friendly meal. I’m going to go hunt for my BOGO brie!!

    You’re so lucky! I can never find vegetables on sale here! But I do love brie, so I think a splurge is worth it on this dish! I will definitely be trying this soon.
