To say that I am a little excited about this week’s #SundaySupper is an understatement. Not only are we huge beef lovers, we experienced a great beef demo during this year’s Food and Wine Conference. This demo has me pumped to try some new beef recipes – when I told my boys that we were featuring beef for #SundaySupper, they couldn’t be more excited. They know what that means – recipe testing and development usually means that I need my favorite taste testers in the kitchen with me.
One of the things that I really enjoyed and took away from this year’s Food and Wine Conference was that we can buy larger and less expensive pieces of beef and cut them down ourselves. Yes, you too can become your own butcher. Bridget Wasser the Executive Director, Meat Science & Technology in the Department of Science & Product Solutions at the National Cattlemen’s Beef Association (NCBA), made it look so easy! I especially loved that she encouraged us to use a ruler when cutting our own steaks to ensure that we cut our steak the same thickness. Such a great tip and so important when you are grilling!

From the moment Chef Dave Zino took over the stage, he had us all drooling. The beautiful aromas drifting throughout the room were amazing. Needless to say, we were all drooling by the time lunch was served. I love that Chef Dave inspired us to think of out the box when using beef. His Arugula Tomato Steak Salad is one that I have been dreaming about since the conference. Not only was it visually pleasing, it combined some of my favorite flavors into a healthy and nutritious salad.
Inspired by Chef Dave, I am excited to try more recipes using beef. He inspired me to think about quick and easy meals for #WeekdaySupper and also made me realize that beef dishes don’t have to be heavy – they can be light and delicious. The versatility of beef recipes are truly endless.
