Flan in Moscato Wine Sauce #SundaySupper

Flan with Moscato Sauce #SundaySupper I can remember waking up on Saturday mornings to the sweet smell of caramel coming from the kitchen. It was the most wonderful smell to wake up to. Hearing the sound of the mixer whirling as this amazing smell made it’s way into my room could only mean one thing. I immediately knew that my mother was making Pudim de Flan and most likely would be inviting our Portuguese friends over for Sunday Supper.

Sunday Supper, was almost always served by 3 o’clock. When my American friends would ask, why do you eat so early, we chalked it up to “It’s a Portuguese Thing.” We were always certain that there would be a delicious dessert served after Sunday Supper and there was a 50-50 chance that it would be Flan Pudding or Rice Pudding.

My mother would almost always prepare the Pudims one day ahead of time and serve them cold. I loved to eat them when they were still piping hot and would always beg to have her make them in small ramekins — that way, I wouldn’t have to wait to dig in.

My four children grew up anticipating that when we visit Vo-Vo’s house, there will most likely be a Flan Pudding in the fridge waiting for them. As they like to say, no one makes Flan like Vo-Vo does. When I tried this new spin on the traditional Portuguese Flan, I was a little hesitant to share it with my family for fear that it wouldn’t meet the Vo-Vo seal of approval.

Flan with Moscato SauceWhile it will never compare to Vo-Vo’s Flan, we have fallen in love with Flan in Moscato Wine Sauce at our house. The biggest difference in this Flan in Moscato Wine Sauce is that it is baked in the oven and the caramel sauce is made even more delicious by the sweet Moscato Wine. Now, I must make this for Vo-Vo and Vo and see if they approve!

Flan in Moscato Sauce #SundaySupper

Prep Time: 15 minutes

Cook Time: 35 minutes

Yield: 8

Flan in Moscato Sauce #SundaySupper

Ingredients

  • 1 ½ cups sugar
  • ¼ cup Moscato Wine
  • 8 eggs
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups of whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350° F.
  2. Stir sugar and Moscato Wine in a heavy small saucepan over medium heat until sugar dissolves.
  3. Increase heat and bring to a boil without stirring for about 10 minutes until liquid turns into syrup, occasionally swirling pan.
  4. Quickly and carefully pour caramel into eight 6-ounce ramekins.
  5. Tilt each ramekin to completely coat the bottom with syrup.
  6. Transfer ramekins to large baking pan with 2-inch sides.
  7. Using a hand mixer or whisk, blend the eggs, condensed milk, whole milk and vanilla until well blended and smooth.
  8. Pour custard mixture into prepared ramekins, dividing equally.
  9. Pour hot water into a baking pan until it comes halfway up the sides of ramekins.
  10. Bake flans until center is gently set, for about 35 minutes.
  11. Remove from oven? Cool flans completely (they can be refrigerated overnight).
  12. Run knife around each ramekin to loosen.
  13. Turn each ramekin over onto a plate.
  14. Shake gently as you lift each ramekin, allowing syrup to run over flan.

    Ok, I really do not like flan…the texture just doesn’t do it for me, but yours looks so pretty it makes me wish I did like it. I’d just use a spoon and eat all the Moscato wine sauce around it 🙂

    I think I need to try Vo-Vo’s flan. My mom likes to think she makes the best flan around and is always comparing hers to restaurants. But I’m thinking Vo-Vo might give her a run for her money.

    Flan always takes me back to my first week of culinary school. Not because it’s easy, but because Pastries 1 just happened to be my first rotation 🙂 Yum!

    Pudim (in Porteuse) or Purin (in Japanese) – caramel flan evokes memories of childhood comforts. Love your grownup twist of Moscato wine =)
