Angel Hair Pasta with Chicken, Spinach and Wine Sauce What should I make for dinner? That is what I found myself asking my family recently. Ron chimed in — You haven’t made that Chicken Recipe with the angel hair pasta and white wine sauce that you used to make when we first moved to Florida. For a minute, I couldn’t recall what recipe that could be, but then it came back to me. He was referring to my Angel Hair Pasta with Chicken Spinach and White Wine Sauce.

Along with the memories of this Chicken and Pasta Recipe, came memories of our transition from Pennsylvania to Florida. Memories of living on the beach while our house was being built and I reminisced just how scary it was to move away from family for the first time.

Angel Hair Pasta with Chicken, Spinach and Wine SauceI recall looking forward to dinner around the family table every night more than ever. That meant that Ron would be home and I would have someone to talk to besides a toddler and a 9 month old. I could whip up this recipe for Angel Hair Pasta with Chicken Spinach and White Wine Sauce in the small condo kitchen and we could sit on the deck with a glass of wine and enjoy the sunset while enjoying a restaurant style meal.

I am not sure how or why I stopped making this dish, but everyone in our home is in agreement — it’s so good to see it back around our family table!

Angel Hair Pasta with Chicken Spinach and White Wine Sauce #SundaySupper

Prep Time: 15 minutes

Cook Time: 30 minutes

Serving Size: 6

Angel Hair Pasta with Chicken Spinach and White Wine Sauce #SundaySupper

Ingredients

  • 1 pound of Chicken Breast, cut into 1 inch cubes
  • 1/4 cup flour
  • 2 teaspoons garlic powder
  • sea salt and fresh ground pepper to taste
  • 1 pound angel hair pasta
  • 1/2 cup olive oil
  • 4 cloves garlic, sliced paper thin
  • 1 cup of white wine, I used Gallo Sweet White Wine
  • One bunch of fresh spinach or 12 ounces of of bagged spinach, rinsed well
  • 2 cups of chicken broth
  • 1/2 cup grated parmigiano cheese
  • 1/4 cup chopped fresh italian parsley

Instructions

  1. Place the chicken in a large bowl and add the flour, garlic powder and salt and pepper
  2. Stir the chicken until the chicken is evenly coated with the flour mixture
  3. Bring a large pot of salted water to a boil
  4. Add the angel hair pasta and cook for 5 minutes
  5. Meanwhile, heat the olive oil and garlic together over medium heat until the garlic is soft but now brown
  6. Add the Chicken and cook until chicken is lightly brown, approximately 8 minutes
  7. Stir in the wine and stir until a thick creamy sauce forms
  8. Add the spinach and cook for 2 minutes
  9. Add the chicken broth and simmer for 5 minutes
  10. Drain the angel hair and toss it in the pan with the chicken and spinach over low heat until well coated
  11. Add the parmigiano cheese, parsley and sea salt to taste, and toss to mix.
  12. Transfer to a warm platter and serve immediately.

We have enjoyed creating recipes with stories around Gallo Sweet Wine Blend and the Gallo Merlot.   I enjoyed the Gallo Sweet Wine Blend, this sweet, light-bodied wine is best served chilled and pairs well with fresh fruit, light salads and most brunch fare. It was not only perfect in this recipe, but it paired really well with the light pasta and chicken dish. Ron completely enjoyed the Gallo Merlot, the full-bodied Merlot is all about taste. It’s tough not to enjoy the blended flavors of black cherry, ripe plum and hints of oak that create a velvety richness. The Merlot has become one of Ron’s new favorites.

    I love when “old” recipes resurface! Every once in a while it is kind of nice to bring them back to life…especially when they’re something yummy like this pasta dish…pretty sure I could eat a bowl of that every day!

    Cannot wait to try this. It’s my type of thing, stuffed with greens. I’m going to use my beloved chicken thighs in it, but I promise not to tweak it any more than that. Oh, who am I kidding. I’ll put toasted pine nuts on top, too. I cannot wait for dinner! 🙂

    Isn’t it funny how we sometimes forget about recipes we love? It makes me so sad when I remember a long-forgotten dish, but then I love the chance to make it again and take a trip down memory lane. I guess that’s the thing about cooking for a living (at least for me), I make something new every single night. We rarely have repeats.

    Love this recipe. It looks like something that would be perfect to whip up for a casual dinner party with a few friends.

    I am such a sucker for pasta in a good wine sauce. This looks delicious! I agree about forgetting favorite recipes. Often I can’t recall them until someone asks me why I haven’t made something in so long!

    Love the sound of this dish!

    I know that experience of a new place with young children. My move to NJ from SF was a trying transition. At least your husband came home for dinner! Mine was gone for weeks at a time!

    I stumbled upon your website last week and read this recipe. It sounded so amazing. Tried it out on the family two nights ago and it did not disappoint! So delicious! I have been searching for an “Italian” type dish that was different, but still rich and satisfying. This absolutely fit the bill. Bravo!
