Chicken Orzo Soup #SundaySupper

Chicken Orzo Soup Is there a better way to show your love and care than with comfort food? We have two sickies in our home. It seems that every year right around the holidays, someone in our house comes down with something and we pass it from one person to another. Since we are going on week two, I decided I needed to come up with a different soup the traditional Chicken Noodle Soup. We love orzo almost as much as rice and noodles, and I decided that Chicken Orzo Soup was in order.

This little creation lead to a quick family favorite and just in time for this week’s #SundaySupper event. Tammi from Momma’s Meals is our fabulous host and we are having fun with recipes based on our favorite Christmas Song or Movie. So unlike most of our contributors who start off with the theme and then develop the recipe, I decided that I needed the recipe to fit into the theme. I just couldn’t wait to share this Chicken Orzo Soup recipe with all of you.

Not wanting to be a rule breaker, I needed to find the right song or movie to stay within the theme. I turned to our contributors for help and inspiration. Could I make Chicken Orzo Soup fit in with this weeks theme? When I tell you that we have so much fun behind the scenes as we plan our events, you have no idea! This will give you a quick glimpse into our behind the scenes as we prepare for event.

Me: Ok, is it a stretch if I make Chicken Orzo soup for this week’s #sundaysupper event based on the 12 Days of Christmas

Lauren Keating what’s the link there? lol (I’d kill for some chicken orzo soup right now though)

Lori Yates You’re not going to be chopping up Drummers Drumming and putting them in there, are you? Because if so, I say thumbs down

Susan Knoll Palmer I mean I stretched things by making Gin and Tonic Cupcakes based on one line from the Chanukah song, I think you can get away with it.

Lori Yates Lords A Leaping – have your son leap around the kitchen while it simmers? Be careful with that, though  hahaha

 

Lori Yates I take that back, you really shouldn’t leap in the kitchen. Have him leap in the dining room.

 

Brianne Izzo You thought it would be a “leap” for the recipe to work with that song.

I love our Sunday Supper Family and I can’t imagine my days without them. I am so thankful that we have been brought together by the mission to bring families back to the dinner table. It’s about our mission but it is about so much more. The friendships and the sense of family within our community if something that we could never put a price one. I feel so grateful and blessed to be part of our Sunday Supper Family. 

Chicken Orzo Soup

Chicken Orzo Soup #SundaySupper

Ingredients

  • 3 tablespoons Olive Oil
  • 1/2 Onion, chopped fine
  • 4 Celery Stalks, diced
  • 4 Carrots, diced
  • 3 teaspoons minced Garlic
  • 8 Cups of Water
  • 1 Chicken Carcass with some meat left on it. Rotisserie Chicken works great too.
  • 2 tablespoons Chicken Base
  • 8 ounces Orzo. 1/2 package
  • Salt and Pepper to taste

Instructions

  1. Heat Olive Oil in large Pot.
  2. Add Onion, Celery, Carrrots and Garlic and saute until soft.
  3. Add Water, Chicken Base and Chicken Carcass and bring to a boil.
  4. Once boiling, reduce heat to low and simmer for 2 hours.
  5. Remove Carcass, making sure there are no bones left in the broth.
  6. When Chicken is cool enough to touch, pick bones clean, discarding bones, skin and cartilage.
  7. Add Chicken back into the broth and bring to a boil.
  8. Once boiling, bring back down to a simmer and add Orzo Pasta
  9. Simmer for 1/2 hour.
  10. Season with Salt and Pepper if needed

      Hi Kay- Chicken Base is similar to chicken bouillon but in a liquid. Glad you pointed that out. I should include it in the recipe so that everyone knows. Thanks so much!

    I wish we could go through the holidays without at least one person getting sick. Thankfully my husband, daughter and I have been fortunate to miss the bug going around. But a lot of our extended family members have been hit with it. Here’s hoping everyone feels better by Christmas.

    I missed the conversation but it made me laugh when I read through the whole thing the next day, Isabel. We love orzo too and your chicken soup would definitely cure whatever ails you! Another cold front is coming through here in Rhode Island and I would love a big bowl!

    Just started laughing again reading through that conversation one more time 🙂 We have so much fun together, I love it. I think anybody who works from home misses the workplace interactions with coworkers once in awhile, but conversations like this during the day kind of replaces that for me. Delicious looking recipe, too, Isabel!
