Egg and Chorizo Wrap #WeekdaySupper

If someone asked you what ingredients could you find in your refrigerator at any given time, what would you say?  At our home, you can always find Eggs, Chorizo, Cheese and Flour Tortillas.  We are obsessed with all three things and the possibilities that these ingredients can create! Well, this particular dish was created out of necessity during a busy evening that we had to get the boys out the door to football practice.  You know, that moment of “oh shoot” I didn’t plan anything for this evening’s meal.  We took a peek in the fridge and came up with this winning combination.  This Egg and Chorizo Wrap has become one of our easy Breakfast for Dinner Weekday Supper favorites.

Egg and Chorizo Wrap #WeekdaySupper

Ingredients

  • 2 teaspoons Butter
  • 1 Chorizo link, sliced thin
  • 4 Eggs
  • 1/2 cup Cheddar Cheese
  • 4 medium Flour Tortillas

Instructions

  1. Melt Butter in large frying pan
  2. Add the Chorizo slices and cook on medium heat until crispy
  3. Add the Eggs and Scramble
  4. Add the Cheese and mix until melted
  5. Place the Egg mixture in the middle of each Tortilla and wrap tight
  6. Place each Tortilla bundle on a baking sheet
  7. Bake at 350 degrees for approximately 12 minutes or until crispy
  8. Serve with Fruit or Garden Salad

    We make breakfast tacos or burritos a lot on the weekends. Great idea to bake them to get a crispy outside. I can’t wait to try that this weekend.
