Happy Monday! I am looking forward to a great week ahead! The boys are really enjoying 8 on 8 spring football, Riley is trying out for volleyball, I am planning our Easter Menu and I am excited to visit Chicago for the first time. It will be busy but also so exciting. I have begun planning my make-ahead meals to leave for Ron and the boys. I’m thinking some type of casserole or a crock-pot meal that they can reheat. Last time I flew to NYC, I left them my Portuguese Chicken Casserole and Portuguese Spicy Pulled Pork Sandwiches and they were a huge hit. Any suggestions for me? I am trying to get better at taking advantage of casserole and crock pot meals more often.
