EMERIL’s new Kicked-Up Sandwiches Cookbook Rocks!

You all know how much I absolutely adore Emeril Lagasse.   I can still remember the first time I watched Essence of Emeril, I had to watch it because my mother said so.  You see, it’s a Portuguese thing.  When my mother first discovered Emeril and realized he was Portuguese, you would have thought they were related.  He’s a Portuguese Chef and he’s on TV.  Seriously, that was enough, the fact that he was Portuguese meant that we just had to love him.   Portugal is such a tiny country and if you are an immigrant, you learn at a very young age that you are to support anyone who is Portuguese.  Let me tell you, the Portuguese have each others backs unconditionally.

After watching the first couple of episodes, I too fell in love with Emeril and loved hearing his stories about his Portuguese mother, Hilda.  I found myself trying his recipes and practicing my BAM’s!  Imagine how excited I was when I was received an email from Morrow Cookbooks asking me to participate in Emeril Lagasse’s Serious Sandwich Cookalong!  I couldn’t wait  to take a peek at Emeril’s Kicked-up Sandwiches Cookbook before it is even came out.  I don’t know who was more excited me, my mother or Reis.

Reis and I have had so much fun going through this cookbook and picking out our favorites to share with all of you.  We hit the grocery store and ran to the kitchen to start creating amazing sandwiches from Emeril’s Kicked-up Sandwiches Cookbook.

The first sandwich I got to choose.  Since I am crazy about Salmon, I couldn’t wait to try the Smoked Salmon Bagel with Mascarpone Cheese.  All I can tell you is….BAM!  This Sandwich Rocks!  The mascarpone takes this sandwich over the top.  Adding a little lemon zest to the mascarpone cheese created a wonderful surprise when you bite into it.   This sandwich gets a perfect 10 from me!  The next one coming up was chosen by Reis and it is just as good if not better.

    Good choice with this sandwich – your photo has me drooling! I love everything bagels almost as much as straight-up salt bagels. Might have to alter this one a bit 😉

    My fave Emeril recipe is his Chicken Cordon Bleu or his Jambalaya. . one of those for sure!

    My favorite Emeril recipe is his Apple Coffee Cake with Crumble Topping and Brown Sugar Glaze. I love a good coffee cake and this one is wonderful!

    I loved Emeril’s Bouillabaisse from Sizzling Skillets, but am always up for salmon and bagels! Looks yummy! Going to try the mascarpone too!

    My favorite recipe is the very basic Emeril’s Essence…with that, I can kick anything I make up a notch! Love Emeril. I also love the looks of that pizza sandwich. Might have to make that for dinner this week!

    I don’t know if I have a favourite recipe but I did watch Emeril on TV a long time ago and he made a very easy basic tomato sauce with onions, fresh tomatoes, balsamic vinegar, basil and seasoning. Love it and use it forever and always … simply outstandingly deliciously simple!
