The Sunday Supper team has a challenge this week. Meals in Five Ingredients or Less. Could we do it? I have to admit, when our host Amber from Mama’s Blissful Bites first brought it up, I wasn’t sure how easy it would be to come up with good dishes with five ingredients or less. This is a challenge every busy mom faces. I thought about how much my kids love my Goat Cheese Alfredo Sauce over Rigatoni. It is one of the simplest and easiest dinner that I put together but Goat Cheese Alfredo Sauce is requested time and time again.
As usual, the Sunday Supper team stepped up to the challenge and created over 50 recipes where five ingredients come together to make a scrumptious meal. I love to make Goat Cheese Rigatoni Alfredo because it is so easy and versatile. It is perfect for a Sunday Supper side dish paired with London Broil, Chicken and Veggies. It is also one of our favorite Weekday Suppers. We add peas, broccoli, leftover diced chicken or salmon. The combinations are endless and it is a great way to have dinner on the table and the kids out the door to practice.

- ½ stick of Butter
- 2 Garlic Cloves minced
- 2½ cups of Half-and-Half
- 8 oz Goat Cheese
- 16 ounce package of Rigatoni cooked al dente
- Salt and Pepper to Taste
- Melt the Butter in a large saucepan
- Add the minced Garlic and saute until lightly browned
- Slowly stir in the Half-and-Half while stirring constantly
- Add the Goat Cheese in small amounts and stir until creamy and smooth
- Add the cooked Rigatoni and simmer on low for five minutes
