Football Season in our home is simply crazy. You can imagine what it is like to juggle three football schedules. If you could believe it, there was a time we were juggling four football schedules. Although our daughter was a cheerleader, it was still another game that we wouldn’t miss! To say that we are a true Football Family is probably an understatement. This time of year, there are some Sunday’s when one of our favorite teams is playing that we move Sunday Supper into the family room and enjoy a fun football tailgate menu. On the top of our tailgate menu list is always Skinny Chicken Bacon Bites.
Are you wondering why Skinny Chicken Bacon Bites? Well what makes them skinny is the fact that I use turkey bacon in this recipe. Turkey Bacon is perfect because it has less fat and you don’t get all the grease at the bottom of the pan. The Skinny Chicken Bacon Bites are actually really crispy on the outside and so tasty on the inside. The combination of the salty and sweet in this dish makes it perfect to serve on your tailgate menu.
Football Season is the perfect time to bend the Sunday Supper rules a tad and enjoy spending time around the family table in the family room and yes, our tv is on… and you can find us enjoying Skinny Chicken Bacon Bites on the sofa.

- 3 pounds thin Chicken Breast cut into 1 inch cubes
- 1 pound Bacon with each strip cut into 3 pieces
- ¼ cup Soy Sauce
- 1 teaspoon Garlic mined
- 8 tablespoons Brown Sugar
- 2 Green Onions sliced thin
- Wrap the Chicken Breast cubes with the pieces of bacon
- Layer on a large glass baking dish
- Combine the Soy Sauce and Garlic and spread over Chicken
- Bake on 375 degrees for 20 minutes or until chicken is cooked through
- Sprinkle the Brown Sugar evenly over the Chicken and return to over for 5 minutes or until bacon is crispy and sugar is melted
- Sprinkle the Green Onions over the Chicken and serve with toothpicks
