Greek Salad Flatbread

My Big Fat Chicken Greek Salad Flatbread is an amazing combination of flavors your family will love. 

I will never forget the first time I watched the original My Big Fat Greek Wedding. All I could think is… this movie should be My Big Fat Portuguese Wedding. I laughed and laughed and could relate to so many parts. Growing up, we spoke a different language at home and we cooked weird (to Americans) things.

When my second grade teacher asked the class what the strangest thing they had ever eaten. My answer left the class aghast and me wondering if I should have kept the answer to myself. I knew that eating fish eyes was a little strange but I am not sure that I realized just how strange until I saw the reaction from the class. At that moment, I knew my life was different and what was normal in our home, was not normal to every American.

If you have followed me for a while, you know that any time the question of favorite movie featuring food comes up, there is only one answer. My Big Fat Greek Wedding! The bundt cake, the lamb and so many funny moments. I couldn’t be more excited for the sequel.

The funny thing is that when it came time to create a recipe, I drew a blank. How could this be? One of our Sunday Supper Tastemakers reminded me that I couldn’t go wrong with Greek inspired flatbread. After all, I am known a the Flatbread Queen. Aha! I adore a great Greek Salad and I was excited to try this tasty Greek Salad Flatbread.

Chicken Greek Salad Flatbread

The question became… to add potato salad or not. In our area, potato salad on a Greek Salad is common, some would say required. I realize that is not the case everywhere but I encourage you to try it. It is really, really good. I have tried this flatbread with and without and while I prefer it with the potato salad. Don’t sweat it if you don’t have it. The combination of flavors is amazing all on it’s own.

Another fun thing to do with Chicken Greek Salad Flatbread is to make a flatbread bar and let everyone add their own toppings. This is a big hit when we have friends over for a get together.

Ingredients
  • For the Dressing and Marinade:
  • the juice of one lemon
  • ¼ c. olive oil
  • 1 tsp. sea salt
  • 1 tsp. Cavender's Greek seasoning
  • 1 large boneless and skinless chicken breast
  • 2 tablespoons butter
  • 4 pitas
  • 1 small head romaine lettuce, chopped
  • 2 Plum tomatoes, quartered
  • ¼ cup jarred banana pepper rings
  • ¼ cup pitted kalamata olives
  • ½ red onion, sliced thin
  • ½ cup crumbled feta cheese
  • 1 cup potato salad (optional)
Instructions
  1. Make the dressing at least one day ahead by mixing the juicy of one lemon, olive oil, sea salt and Cavender's Greek seasoning in a jar and mixing until well combined.
  2. Refrigerate for at least 24 hours.
  3. Place the chicken breast in a plastic bag and add 4 tablespoons of the dressing.
  4. Refrigerator for at least 24 hours.
  5. Heat the sauté pan over medium-high heat. When it hot, add the butter and make sure the pan is covered with butter.
  6. Turn the heat to medium and add the chicken breast.
  7. Cook for approximately 5 minutes on each side or until chicken is no longer pink in the middle.
  8. Remove to a plate, slice and cover until the salad is ready.
  9. Preheat oven to 325º
  10. Place pitas on a cookie sheet and bake for approximately 3-5 minutes until warm.
  11. Assemble the flatbread salad by layering the romain lettuce, tomatoes, banana pepper rings, olives, onion, chicken, potato salad and feta cheese.
  12. Drizzle with greek dressing and enjoy!

    Yeah, I don’t think I could eat fish eyes. 😉 But I would eat this flatbread in a hearbeat! Looks absolutely delicious as it should, coming from the flatbread queen! 🙂

    I felt like it was my Big Fat Irish Wedding too! I think many families can relate and my poor husband has been in for a whirlwind since he met me!

    I served this with hummus in lettuce cups for a low carb but very tasty version. It worked out very well! I’m super pleased. Thank you for sharing this wonderful recipe.
