January is a special month for me. It resembles the start to a new year and I will always remember the first #SundaySupper we hosted on January 8, 2012. It all started with a progressive dinner and there were eight of us excited to participate in a fun joint venture. I was on a high because I had tweeted Mario Batali and he had tweeted an entire #SundaySupper menu . Just the thought that Mario Batali would respond to a tweet blew my mind, never mind an entire Sunday Supper.
They say a journey starts with that first step and although I have known this, I never imagined that step would turn into a journey that could change the path to the future. On that Sunday afternoon in January, I realized I wanted to grow my passion for bringing families together around the dinner table. It felt so good to plan a menu with other bloggers instead of writing alone and I knew I wanted to grow a community.
The last four years have been — Exciting. Scary. Fun. Emotional. Rewarding. Challenging. And everything else in between. I have grown, I have learned and most of all I cherish each encounter, each new blogger who joins our community and each partner we welcome around the Sunday Supper family table. Cherish is my word for 2015 because I have grown to understand that time is precious. Cherish relationships in business, with our children, with my parents, with our community or with our followers. Special moments are precious and should be cherished.

Thank you for all your support. I could have stayed in 2015 for the rest of my life and been content. It was one of the most rewarding and exciting years for me. It’s time to turn the page to 2016 and we are excited to kick it off with our month-long celebration of National Sunday Supper Month along with National Sunday Supper Day on Jan. 10. We want to challenge families to take the Sunday Supper pledge and to join our daily Instagram challenge. Instead of focusing on diet this year, let’s make 2016 the year we focus on family time around the family table!
In honor of that first #SundaySupper four years ago and Mario Batali, I am sharing a super easy Portuguese recipe that my family loves. It is one of those one pot recipes that came be made for Sunday Supper and reheated for a quick Weekday Supper meal. I thought it was appropriate for this month’s Sunday Supper pledge because it is a no frills kind of meal that is packed with flavor.

- 4 tablespoons olive oil
- 6 chicken thighs
- 1 small chorizo link, sliced into thin rounds
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups baby carrots
- 3 pounds fingerling potatoes, washed and scrubbed or 10 yukon gold potatoes cut into quarters
- 6 oz can tomato sauce
- 3 cups chicken broth
- 3 bay leaves
- 2 tablespoons paprika
- 1 tablespoon rosemary, chopped fine
- salt and pepper to taste
- additional rosemary to garnish
- Sprinkle the chicken thighs with salt and pepper.
- Heat 4 tablespoons olive oil in a Dutch oven over medium-high heat.
- Brown the chicken on all sides.
- Remove to a plate when well browned.
- Add the chorizo and cook until crisp.
- Add the onion, garlic, carrots and potatoes to the dutch oven and cook until softened, 7 to 8 minutes, stirring occasionally.
- Add tomato sauce, chicken broth, bay leaves, rosemary and the cooked chicken to the pot.
- Cover and simmer on low for approximately 1 hour.
- Serve immediately with crusty bread.
- This can also be made ahead and reheats perfectly the following night.
