| Pao de Lo | Portuguese Sponge Cake |
- 9 large eggs
- 1½ cups sugar
- 2 cups flour. sifted
- ¼ tsp salt
- 1 tsp baking powder
- 1 tsp grated lemon
- In a large bowl beat the eggs until foamy.
- Add sugar and beat for at least 20 minutes until batter becomes very thick.
- Add lemon.
- Mix flour, salt and baking powder in a small bowl.
- Add the flour mixture ¼ cup at a time on low speed.
- Don’t over beat.
- Grease a bundt pan.
- Bake at 350 degrees for 45 minutes or until a toothpick comes out clean.
- Let the cake cool for about 10 minutes before removing it from the pan.
- Flip onto a plate and decorate with a plant (kidding).
