Red Cabbage Citrus Salad #SundaySupper
Ingredients
  • 1 head of red cabbage, chopped
  • 1 red pepper, cut in strips
  • 1 orange or 3 clementines
  • 1 leek, chopped fine
  • For the Vinaigrette:
  • 1 Orange or 3 Clementines, juiced
  • 1 teaspoon orange zest
  • 3 Tablespoons balsamic vinegar
  • ½ cup of olive oil
  • 1 tablespoon honey
  • salt and pepper to taste
Instructions
  1. Combine the red cabbage, red pepper, orange and leek in a large bowl.
  2. Add the Vinaigrette a little at a time and mix well.
  3. *Vinaigrette can be made a day ahead of time and refrigerated.
