| Red Cabbage Citrus Salad #SundaySupper |
- 1 head of red cabbage, chopped
- 1 red pepper, cut in strips
- 1 orange or 3 clementines
- 1 leek, chopped fine
- For the Vinaigrette:
- 1 Orange or 3 Clementines, juiced
- 1 teaspoon orange zest
- 3 Tablespoons balsamic vinegar
- ½ cup of olive oil
- 1 tablespoon honey
- salt and pepper to taste
- Combine the red cabbage, red pepper, orange and leek in a large bowl.
- Add the Vinaigrette a little at a time and mix well.
- *Vinaigrette can be made a day ahead of time and refrigerated.
