- 2 cups (12 ounces) frozen cauliflower rice or 2 cups of cooked finely diced cauliflower
- 2 tablespoons butter
- 1 tablespoon flour
- 1 tablespoon minced garlic
- 2 cups whole milk
- 4 ounces cheddar cheese
- 2 cups fresh spinach
- Salt and Pepper to taste
- Squeeze the bag of frozen cauliflower rice gently to separate veggies. Pour contents of bag into large nonstick skillet.
- Cook over medium heat 5 minutes or until veggies are hot, stirring occasionally.
- While the cauliflower is cooking, melt the butter in a large non-stick skillet.
- Add the flour and minced garlic and cook for a few minutes until the mixture turns a golden color.
- Slowly add the milk; cook, stirring constantly, until mixture bubbles and thickens, 1 to 2 minutes.
- ADD cooked cauliflower rice and cheese to sauce in skillet; stir until cheese is melted.
- Stir in the spinach for another 2 minutes until the mixture is well blended and slightly bubbling.
- Stir in salt and black pepper.
- Top with your favorite protein and BBQ sauce if desired (optional)
