- 1 pound yellow skin golden flesh Idaho® potatoes or potatoes of your choice
- 4 tablespoons olive oil
- 2 small chorizo links (hard Portuguese or Spanish chorizo, do not use Mexican style chorizo)
- 2 teaspoons garlic powder
- 4 teaspoons paprika
- 2 tablespoons butter
- 1 teaspoon fresh garlic, minced
- 1 cup white wine
- 4 large eggs
- 2 teaspoons parsley, minced (optional)
- 1 cup cheddar cheese curds
- fresh ground sea salt and pepper to taste
- Preheat oven to 425º
- Slice the potatoes into one inch cubes and place in a large bowl
- Slice the chorizo in thin rounds
- Add the olive oil, chorizo, garlic powder and paprika to the potatoes.
- Stir until well coated.
- Place on a large sheet pan or cast iron baking pan. Make sure to spread the potatoes evenly
- Place in the oven and bake for 30 minutes or until the potatoes are crispy and golden brown
- In a large skillet on medium high heat add 1 tablespoon butter, minced garlic and saute until garlic is browned
- Approximately 5 minutes
- Add the white wine turn heat to low and simmer until sauce is reduced in half. Approximately 8-10 minutes
- Add the remaining tablespoon butter to another skillet and melt the butter. Crack the eggs and cook sunnyside up. Approximately 2-2½ minutes over medium heat
- Assemble the poutine, either on a large platter or 4 small plates. Layer, potatoes, eggs, chorizo sauce and chorizo, cheese curds and minced parsley if desired.
- Season with fresh ground sea salt and pepper to taste.
