Salmon Asparagus and Capers Panini #SundaySupper

This panini is an amazing combination of flavors brought together by our favorite Easter leftovers. We make this almost every time have leftover salmon.
Ingredients
  • 1 small round ciabatta loaf
  • 6 ounces of cream cheese, softened
  • 1 cup cooked salmon, flaked into small pieces
  • 6 cooked asparagus, using only the top half which is softer
  • 2 tablespoons capers
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 7 slices of thin cheddar cheese
Instructions
  1. Slice the ciabatta bread in half
  2. Spread the cream cheese on one half of the ciabatta
  3. Layer the salmon, asparagus and capers on top of the cream cheese
  4. Spread the cheddar cheese slices over the other half of the bread
  5. Mix the garlic powder and olive oil in a small bowl
  6. Drizzle half of the olive oil over both halves of the ciabatta and close the sandwich
  7. Using a pastry brush, brush the outside of both sides of the ciabatta bread
  8. Place on a preheated panini press or large skillet and press until the cheese is warm and oozing out of the sandwich. Approximately 10 minutes. If using a skillet, press the sandwich as it cooks with a spatula.
