White Bean, Corn, Tomato and Rice Skillet #SundaySupper

Have fun with this recipe and throw in any leftover veggies that you have. If you love adding chicken or fish - go for it. It is delicious.
Ingredients
  • 2 tablespoons olive oil
  • 1 cup grape tomatoes, sliced in half
  • 1 cup cooked corn, frozen or fresh
  • 1 15 ounce can of white beans
  • 2 tablespoons ponzu sauce
  • 2 cups of your favorite cooked rice, I used Portuguese Rice
  • 4 green onions, chopped
  • fresh ground sea salt and pepper to taste
Instructions
  1. In a large skillet, heat the olive oil on medium high
  2. Add the grape tomatoes, corn and white beans and sauté for approximately 5 minutes
  3. Add the ponzu sauce and stir for another minute
  4. Stir in the rice and when well mixed, cover for another 5 minutes
  5. Sprinkle with green onions
  6. I love to serve it right in the skillet so that it stays nice and warm
