Thanksgiving Leftover Casserole

I know I have already told you all how much I love this time of year.  Can I just tell you once again?  I love it… and last night was proof that this is a wonderful time of year.  Ronnie’s High School Football Team played their first championship game of the season and it was a shut-out.  The weather was perfect and the game was even better.  Now the countdown is on for Thanksgiving.  I have been busy planning appetizers, a new stuffing recipe, debating what soup to serve.  But I have to tell you, in our house, I am not sure if  we enjoy the Thanksgiving meal or the Thanksgiving Leftovers Casserole.

I love reinventing leftovers and this may be our absolute favorite reinvention.  It’s so easy and the combination of flavors are amazing!  There is just something about the creamy mashed potatoes mixed with the crunch stuffing and the pop of corn.  Oh and don’t forget the gravy, yep, it’s in there too!  Thanksgiving Leftovers Casserole is a true crowd favorite Around the Family Table.  Sometimes we even invite friends over for a casual get-together over the weekend.

I will warn you, Thanksgiving Leftovers Casserole is not very kind to your oven if you overflow like I did!

This is the perfect Thanksgiving Leftover Casserole to make with all the fixins!
Ingredients
  • Leftover Mashed Potatoes
  • Leftover Turkey
  • Leftover Gravy
  • Leftover Corn
  • Leftover Stuffing
Instructions
  1. Layer each ingredient in order of ingredients.
  2. Bake at 400 degrees for ½ hour or until stuffing is crispy.

    Every year I try a new dish with our leftovers, but so far nothing has compared to our love for my basic leftover casserole. There is a big debate in our house if it is even better then the original meal. 🙂

    I made this today Isabel – It’s so good! Definitely a keeper. Funny, I didn’t make my typical quart of gravy this year, so I had to whip some up to add in…but totally worth it!
