Moist Chicken Cutlets Caramelized Onions

Today is National Poultry Day. Seriously, who comes up with these Food Holidays! I am thinking that I would love to have National Chorizo Day since I love to cook with it.  I wonder who I would have to contact in order to declare National Chorizo Day?  There is no better way to celebrate than with Moist Chicken Cutlets Caramelized Onions Recipe.

When I saw that it was National Poultry Day, it reminded me of our favorite Chicken Recipe.  You know, that one recipe that you go to time and time again.  No one in the family ever tires of it. And every time we have it, we think this is the best recipe!

My son Ronnie could eat this Chicken every day of the week.  He likes it so much that we refer to it as Ronnie’s favorite Chicken.

I shared this recipe with you on September 15, 2011 but since it is National Poultry Day, it deserves a repeat of our absolute favorite Chicken Recipe.

And in case you were wondering, Reis is doing just fine! Losing the Student Council Election just added to his already magnificent Character!

Here is my original post:

 My 12 year old came home last week very excited about the Student Council Election. It’s his first year in Middle School …. so this is a big deal! He wanted to run for Publicity.

We made the Vote for Reis stickers, made the large poster boards and wrote the speech…. let me tell you, this was no easy task!

He was so excited and of course, desperately wanted to win!

As soon as I pulled up in car line, I knew.  He didn’t say anything in the car.  When we got home, he told me that he had lost.

As a Mom, my heart was sad for him. What else can you say but… “I’m sorry Buddy, I know that must be hard.”  He said “I’m a little sad, but I will try again next year.”   Every once in a while, we have a moment that we learn and get inspired by our children.

What a great attitude!  If only, as adults, we could see life through a 12 years olds eyes… Not winning an election is not a failure.  In our highly competitive “winning is everything culture” sometimes we lose sight of the fact that giving it your all and having the courage to do it all over again is a reason to celebrate!

So that night, we celebrated by enjoying one of our favorite family meals…

Food is Love and there is no better way to celebrate than Around The Family Table.

A couple of days later, he came home with a big smile on his face… “You’re not going to believe it! I got voted 6th grade Class Representative!”

My baby is growing up and with that process comes the ups and downs that life will bring.

Sometimes the simplest dishes are the most satisfying.  This is truly a Family Favorite!

Moist Chicken Cutlets with Caramelized Onions

Moist Chicken Cutlets Caramelized Onions Recipe

Ingredients
  • 8 Chicken Tenderloins
  • 2 Eggs
  • 1½ cups Seasoned Bread Crumbs
  • ½ Cup Olive Oil *
  • 1 large Red Onion thinly sliced in rounds
  • 3 cups Chicken Broth
Instructions
  1. Dip the Chicken Breast into the well beaten eggs.
  2. Coat with the bread crumbs.
  3. Add Chicken to the Hot Oil in large frying pan or electric frying pan. Flip when nicely browned.
  4. When chicken is done, remove any excess oil from the frying pan. Add the onion and lightly brown.
  5. Add the chicken breasts to the pan and pour Chicken broth over the chicken and onion.
  6. Cover and simmer for ½ hour.
  7. Serve over Portuguese Rice or Orzo Pasta.

This is one of those dishes I always double.  It is even better as a Leftover Meal!

    Thanks for the recipe. What a great attitude your son had about the election. He’ll make a fine representative I’m sure. My sons are only 4 and 1, so it’ll be a while before I have to worry about that kind of stuff. I don’t think that have Pre-K reps. If they do, I’m all set to start up a major FB/Twitter campaign 🙂

    Ok, so my then 9-year old ran for student council the first time and lost, too. Way too many kids ran, so the odds were against him. He was a bit sad. Then he didn’t get student rep. Then he didn’t get safety patrol. That’s when the tears flowed and he cried, “Why do I lose at everything?” And that’s when I struggled to keep my composure. That whole you get lemons and make lemonade just doesn’t cut it sometimes! He’s running again this year. Lord, give me strength!!!

    This is so timely! My daughter came home today in tears b/c she did not qualitfy for the science team that she’s been on for the last two years. And she did not make one of the officer positions for Student Council. After we talked a bit, she called her friend and indeed her friend did not make it either. The tears were gone before too long and next she was telling me she was just going to try out for some of the other school activities that are especially for 5th graders (the last grade in our elementary school). I was so glad to see her bounce back so quickly. And what a nice mom you are to wrap him in love with a warm bowl of your family favorite chicken soup. 🙂
