Rice and Veggie BakeI’ve said it once and I will say it again… our #SundaySupper Movement has the most amazingly talented group of food bloggers.  Week after week the recipes just blow me away.  I am honored to feature Amber from Mama’s Blissful Bites this week.  She has prepared a Brown Rice and Veggie Bake that is so easy and just perfect for entertaining.  Her #SundaySupper recipes are always one’s that I can’t wait to try on my family.  

Amber has a heart of gold and is one of the funniest people I know.  She makes me laugh every day.  I promise you, she will have you in stitches.  What could be better than a blog with great food and a sense of humor?  You know she must have a great sense of humor by the way she starts her post… famous and wonderful Family Foodie… see I told you she would make you laugh!

Hi everyone! I’m really excited to be guest posting for the famous and wonderful Family Foodie! I am a big follower of her work and food! (As I’m quite sure you are too!) I met Isabel through a blogger friend who told me how amazing the #SundaySupper group is, and my friend didn’t let me down one bit! Isabel is my inspiration for guiding me and my family to the dinner table. She is kind, fair and funny. Beyond her delicious food, she has shown me friendship and I’m forever grateful to her for being such a wonderful guide in my blogging world! If you can’t tell that I am still jumping up and down to write this post, you should know I put my sneakers on for the occasion.

If my excitement can hold off for just one tad, I will introduce myself….okay, there we go. Kind of. My name is Amber AKA Mama from Mama’s Blissful Bites. I am a stay-at-home mom of a three-year old and an almost two year old. I write on my findings of staying home but my favorite part are the recipes and kid-friendly recipes! Here you can find a little bit of everything from organizing, going green, question of the week, home remedies and anything else I think of. It’s an outlet for me and a way I can meet new parents to discuss Motherhood with. I love it!

Enough about me, let’s get to the good grub! Brown Rice and Veggies Bake is one of my favorite dishes. I usually make this for my main course (since I rarely eat meat) and serve it with a roasted chicken and BBQ sandwich for my family. It’s a family favorite and is packed with good stuff for the body. Now that, I can’t resist!

Brown Rice and Veggie Bake

This Recipe for Brown Rice and Veggie Bake is perfect for #SundaySupper when entertaining.
Ingredients
  • 2 cups cooked brown rice
  • 2-3 Tbs butter
  • 1 red onion, chopped
  • 8 oz baby carrots: rinsed, stems removed
  • 8 oz baby corn: rinsed
  • 1 zucchini: sliced
  • 2 Tbs fresh lemon thyme
  • 1½ cups mozzarella cheese: shredded
  • 2 Tbs plain bread crumbs
  • 2 Tbs flax seeds
  • 1 tsp oregano
Instructions
  1. Preheat oven to 350 degrees. Grease a 13x9 oven proof dish.
  2. Make rice according to package, serving size 2 cups.
  3. Heat butter in a skillet over medium to low heat. Add the carrots for ten minutes. Let them bathe in buttery goodness!
  4. Add red onion and saute for 5 minutes more until onion is softened.
  5. NOTE: If you are not using baby carrots, you can use sliced carrots. Cook the onion first then add carrots in the next step.
  6. Add zucchini and baby corn for another 5 minutes, stirring occasionally.
  7. In a separate bowl, mix rice, thyme and oregano.
  8. Add rice mixture to skillet.
  9. Add ½ cup of cheese and stir. Season with salt and pepper.
  10. NOTE: I'm a very generous cheese giver... (1/2 cup...pshh!)
  11. Pour mixture into prepared oven-proof dish.
  12. In a small bowl, mix bread crumbs, flax seeds.
  13. Evenly sprinkle breadcrumb mixture over vegetables.
  14. Top with cheese.
  15. Bake for 30 minutes until cheese topping is nice and golden. Serve warm.

    This sounds awesome ladies! Can’t wait to try it, I bet it’s freezable too!! Yay! Now if I could only freeze it long enough, usually I just end up eating it!

      I try to get them into most foods – they are wonderful! To be honest, my husband has never noticed/said anything about them, so I just keep sneaking away 🙂

    Lovely guest post, Amber! This veggie bake looks so good. I love an all-in-one meal. Only one pot to wash… that’s my kind of meal!

    Your “famous and wonderful” reminds me of The Wizard of Oz… “the great and powerful…” Well, you get it. I do, however, think Isabel is a wonderful person and famous foodie.
