Kinda Yucky Kinda Yummy Mother’s Day #SundaySupper

Mediterranean Turkey  Burger RecipeAnyone who has participated in  #SundaySupper knows how heated it can get when everyone is excited and tweeting about their meals.  I try hard to comment on every tweet and post every week but sometimes it is just impossible to keep up.  Every once in a while, we get a #SundaySupper newbie that just knows how to kick it up a notch in order to get everyone’s attention..

Chris Baccus, aka @cbaccus, caught my attention during one of our busy #SundaySupper events.  He engaged and was commenting on what people were cooking and at the end he tweeted #FTW and a recipe.  I have to share, I had no idea what #FTW was and thinking it was a new twitter term, I googled it.  Ahhhh, I was enlightened, FTW = For the Win!  I loved it and that’s when I came across his awesome blog, Sustainable Dad. Sustainable in the kitchen, working on it on the Road… and immediately loved it.

What’s better than a Dad who loves to blog about his adventures with his twin boys!   One of the first posts that I read, put a smile on my face.  It was a post about Trying New Food and Instant Feed Back from the little guys and it reminded me so much of my boys when they were younger.

  1. Yummy: Thumbs up.
  2. Yucky: Thumbs down.
  3. Kinda Yummy, Kinda Yucky: One thumb up and the other thumb down. This one can mean several things. They like a flavor in the food, but not all the flavors. Or they like all the flavors but not the texture.

My kids still rate every meal that we enjoy Around the Family Table and it all began when they were toddlers and were told they had to take a No Thank you Bite.  It is those traditions that are the beginning of the memories that will last a lifetime.

I have enjoyed Chris’s Blog ever since and am honored that he joins us during Sunday Supper.  Let me tell you… the meals that he shares with us are fabulous!  This Dad can Rock Out in the kitchen!

Oh, and I can’t forget to mention that if you are ever looking for Gas Station Tacos, Chris has great recommendations on his other blog, Gas Station Tacos.  Seriously without a great recommendations, it could turn into one of those Kinda Yucky Kinda Yummy situations.

Today he is sharing his Mother’s Day Mediterranean Turkey Burgers Recipe…according to his boys, this may be another of his Kinda Yucky, Kinda Yummy Recipe or maybe just Yucky all together.

With a forecast temperature of 81 on Mother’s Day in Dallas, it is time for some grilling.
One of my wife’s favorite summer meals is this easy and flavorful turkey burger that combines Mediterranean spices and feta cheese. Each burger is served in a pita with mixed salad greens and a generous spoonful of Tzatiki dressing.  I’ll pair this with some fresh diced watermelon also with feta cheese, chiffon basil leaves and some balsamic vinegar.
Sadly, our twin 6 year old boys will eat something else as they just haven’t opened up to eating meat, except Niman Ranch ham and bacon.  While we enjoy some great tasting burgers, the kids will most likely enjoy some ham and cheese sandwiches.  Perhaps next year they can join mom in enjoying this summer recipe.

Mediterranean Turkey Burgers
Serves 4
  •  1 pound ground turkey
  • 1/2 panko (Japanese bread crumbs)
  • 1/4 cup (1 oz) crumbled feta cheese
  • 1 tablespoon minced red onion
  • 2 tablespoons commercial pesto
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 garlic clove, minced
  • 2 cups arugula or mixed greens
  • 4 pitas, toasted and halved
  • Tzatiki:
  • 1/2 cup plain low-fat Greek yogurt
  • 1/4 cup finely chopped, seeded cucumber
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  1. Combine the first 8 ingredients in a bowl; mix until combined. Divide mixture and shape into four patties about 1/2-inch thick.
  2. Mix Tzatiki ingredients by combining all into a small bowl. Set aside.
  3. Heat grill and add patties cooking about 6 minutes on each side until done.
  4. Slice patties and pita bread in half. Stuff pitas with Tzatiki sauce, arugula, and turkey patty. Serve.[/print_this]

    What a lovely recipe. I’m absolutely loving all the flavors here. That being said, this is definitely a “yummy” recipe in my book!

    Thank you both. It is very yummy. Even though we ended up having homemade chili tonight for Mother’s Day, this will end up on my list to make in the coming week or two. Let me know if you try it and please share what you think.
